What Is a Gluten-Free Diet?
Gluten refers to the proteins gliadin and glutenin, commonly found in wheat, rye and barley. When water is added and the dough is kneaded – an essential step in making bread and other baked goods – these proteins combine to create the elasticity that gives bread dough its unique texture.
